Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed plastic food containers being stacked while wet in the dish area. CA: After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food; and may not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.

Adequate ventilation and lighting; designated areas used — Inspector Note: Observed two cell phone devices stored on a prep top cooler and on the prep sink. CA: Lockers or other suitable facilities shall be provided and used for the orderly storage of employees' clothing and other possessions. COS: Food employees removed their devices to the designated employee storage area.

Food stored covered — Inspector Note: CA: Food shall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled, to be protected from overhead contamination. Observed food containers of eggs, tomatoes, onions, blue cheese crumbles, and lettuce without any lids or coverings in the prep top cooler. COS: PIC provided lids for each food container in the prep top cooler.
