Contamination prevented during food preparation, storage, display — Inspector Note: Observed a shallow pan holding dripping water from the reach in cooler. Food items to be served were beneath pans but there were no means of protection. Parchment paper was placed on top of food contents to help prevent food from exposed to splash. Food shall be protected from contamination by storing the food: -In a clean, dry location -Where it is not exposed to splash, dust, or other contamination; and -At least 6 inches (15 cm) above the floor Reach in cooler needs to be repaired to prevent exposure.

Adequate ventilation and lighting; designated areas used — Inspector Note: Observed employee beverages stored inside food contact surface (large pot) across from 4 compartment sink. COS beverages were discarded, pot was placed in 4 compartment sink to be washed. Lockers or other suitable facilities shall be located in a designated room or area where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur.
