Nonfood-contact surfaces clean — Inspector Note: Observed accumulation of soda syrup underneath racks at the drink station and cup holders in an unclean condition. Drink station cup holder with visible debris; not maintained in a clean condition. Food-contact surfaces not clean to sight and touch. CA:Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
Physical facilities installed, maintained, and clean — Inspector Note: Observed in women restroom leak coming into one stall and on the floor of the hand sink station. CA: Ceilings must be smooth, nonabsorbent, and maintained in good repair. A leak means the ceiling is not maintained and poses a contamination risk. Facilities must be maintained to prevent contamination. Water leaking in a restroom can carry sewage aerosols, mold, or bacteria.
Physical facilities installed, maintained, and clean — Inspector Note: Observed Lobby tables not cleaned between customers. CA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing.
Nonfood-contact surfaces clean — Inspector Note: Observed accumulation of soda syrup underneath racks at the drink station and cup holders in an unclean condition. Also noted a mold-like substance on the side of the automatic drink machine at the drive-thru. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
Hands clean and properly washed — Inspector Note: Observed a food handler don gloves to bag fries without first washing their hands. Observed the same food handler touch the trash can, then handle a black tray used for cooked patties, and subsequently touch the cooking station switches. CA: Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles; Before donning gloves to initiate a task that involves working with food. COS: Food handler was instructed to wash hands.
