Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Inspection report posted not most recent. The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away.
Nonfood-contact surfaces clean — Inspector Note: Observed shelves with heavy accumulation of food debris in dry storage area. Also observed accumulation of debris inside patty warmer, microwave and fryer. Advised PIC that Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
Food stored covered — Inspector Note: Observed items (pasta) inside reach in cooler stored uncovered. Foods shall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination;
Proper date marking and disposition — Inspector Note: Observed pasta inside reach in cooler without date markings. PIC reported pasta was made one day prior. Advised PIC to date mark all foods that are time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. COS. item was date marked.

In-use utensils: properly stored — Inspector Note: Observed bowl being used as scoop inside bulk rice container. COS bowl was removed and replaced with a scoop with handle.

Also observed accumulation of debris inside patty warmer, on fryers, stove and grill. Advised PIC that Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
Food stored covered — Inspector Note: Observed open outside cooking area, the outside cooking area shall be designed and constructed so as to control the presence of vermin. PIC advised to add protective screens to prevent entry of flies and other pests.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed knives said to be clean in container with debris. Also observed clean spoons stored directly on shelf not clean to sight and touch. COS. Items were moved to ware wash area for cleaning and sanitization. CA. Equipment food-contact surfaces and utensils shall be clean to sight and touch.
