Adequate ventilation and lighting; designated areas used — Inspector Note: Observed large amount of dust and buildup on fans in walk in cooler blowing directly down over several pans of cooked chicken wings. COS: PIC relocated food items and thoroughly cleaned fans in walk in cooler.

Insects, rodents, and animals not present — Inspector Note: Observed at least a dozen drain flies throughout the main kitchen and the bar areas. COS: Indicated to PIC to work with their pest control company to control the drain flies.

Proper cold holding temperatures — Inspector Note: Observed multiple TCS foods (raw chicken 51F, cooked chicken 45F, cut lettuce 43F) cold holding above 41F located in the the two preptop coolers nearest to the cooking area in the main kitchen. Observed ambient preptop cooler temperatures of 44F and 43F. COS: TCS foods were moved to the walk-in-cooler. Discussed with PIC to monitor temperature in these two units, or have them repaired as this was a repeat violation.

Toxic substances properly identified, stored, used — Inspector Note: Observed spray container of pesticide located in the main kitchen near the mop sink. COS: Informed PIC that pesticide must be removed immediately and only licensed pest control can spray pesticides in a restaurant.
