Utensils, equipment and linens: properly stored, dried, handled โ€” Inspector Note: Observed two stacks of plastic food containers stacked while wet on the dish rack in the dish pit area. CA: After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food; and may not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. COS: PIC separated plastic food containers on dish rack to allow them to air dry properly.

Observed cell phone device sitting directly on prep top table where food is prepared for consumers. Observed employee's personal bag stored on a shelf next to food containers in the main kitchen. COS: PIC moved employee's bag from the shelf and to the designated office area.
