Wiping cloths: properly used and stored — Inspector Note: Observed several wiping cloths being stored on the counter top. Advised Pic that used wiping cloths should be stored in the sanitizer buckets. Cloths were removed and stored in sanitzer buckets.

Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Mechanical dishwasher, hot water sanitization, did not reach 180 F on final rinse. Advised Pic to only manually wash dishes until dish washer is repaired. Sign was posted on dishwasher that stated "Do not use".
