CA: The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away. Discussed with PIC that the permit, score, and food safety manager certificate must be moved one foot to the right or to another wall so that the score isn't covered by the main kitchen door when it is open.
Proper cold holding temperatures — Inspector Note: Observed shelled hard boiled eggs cold holding at temperatures above 41F (See temperature log) CA:TCS foods that are cold holding must be held at a temperature of 41F or below. COS: The shelled hard boiled eggs were discarded and replaced with hard boiled eggs out of the shell. Potable ice was added on top of the eggs to keep them cold.

Post the permit in a location in the food service establishment that is conspicuous to consumers Discussed with PIC that the score, permit, and CSFM must be moved to an open area where consumers can see upon entry.
Proper cold holding temperatures — Inspector Note: Observed whipped cream cold holding at temperature higher than 41F. CA: TCS foods that are cold holding must be held at a temperature of 41F or below. COS: PIC added more ice to the container, when the ice bath was not effective, the whipped cream was placed in the refrigerator and replaced with a whipped cream from storage cooler that was at 38F. Discussed with PIC that they may want to put the whipped cream on time, or switch between two or more whipped cream canisters from ice bath to cooler every hour.
