Proper cold holding temperatures — Inspector Note: CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. Observed a reach in freezer with an ambient temperature of 57 F. Indicated in the temperature log as (*) COS: PIC removed the box of bread to alternate reach in freezer and placed a not in use label on the reach in freezer until it is removed from facility or serviced.
