Contamination prevented during food preparation, storage, display — Inspector Note: Observed two boxes of sauce and a food container of vegetable oil sitting on the floor in the dry storage area. CA: Food shall be protected from contamination by storing the food in a clean, dry location; where it is not exposed to splash, dust, or other contamination; and a least 6 inches (15 cm) above the floor. COS: PIC moved boxes to a shelf in the dry storage area.

Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed three rusted shelves in the walk-in cooler. CA: Equipment shall be maintained in a state of repair and condition that meets the requirements of the food code. Advised PIC to replace them.

Hands clean and properly washed — Inspector Note: CA: Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles. Upon arrival, observed food employee using their phone with their bare hands and then putting on gloves to cook at the grill. Advised PIC to let food employee know to wash their hands COS: Food employee removed gloves, washed their hands, and put on clean gloves before returning to grill.

Food stored covered — Inspector Note: CA: CA: Food shall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled, to be protected from overhead contamination. Observed food containers of cheese and gyro in the prep top cooler and food containers of chicken wings in the walk-in cooler all without lids or coverings. COS: PIC provided coverings for each food container in the prep top cooler and walk-in cooler.
