Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. COS: PIC will purchase a new cutting board and discontinue using current board.
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed the 1 door reach in cooler not cold holding a temp below 41F in the ware washing area. CA: (q) Good Repair and Calibration. 1. Utensils shall be maintained in a state of repair or condition that complies with the requirements specified under subsections (1) and (2) of this Rule or shall be discarded. 3. Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. Advised PIC to contact a licensed repair tech to service the reach in cooler.
Proper cold holding temperatures — Inspector Note: Observed TCS foods( raw shelled eggs and sliced cheese) cold holding above 41F or below in the 1 door reach in cooler in the warewashing area. CA: Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC removed the raw eggs and sliced cheese to the reach in freezer to be rapidly cooled to 41 or below.
