Contamination prevented during food preparation, storage, display — Inspector Note: Observed cut vegetables stored in reach in cooler with bowls stacked directly on top of other prepared food materials. COS: Advised PIC to discard cut vegetables stored in lower bowl that was in direct contact with the bottom of the other bowl.

Food separated and protected — Inspector Note: Observed raw chicken stored above raw shrimp in one reach in cooler. Observed raw chicken stored above cooked chicken and raw lamb in reach in a freezer. Advised PIC to rearrange freezer, and cooler to internal cook temperatures. COS: PIC rearranged cooler, and freezer to internal cook temperatures.

Proper cooking time and temperatures — Inspector Note: Observed raw whole ducks being partially cooked (reaching internal cooking temperatures of 80-110F), and then stored on a table for cooling and later re-heating per employees and manager. COS: Informed PIC that partial cooking of raw animal foods is not allowed. Raw animal foods must be cooked to appropriate internal temperature.
