Item 12D Good Retail Practice

Washing fruits and vegetables — Inspector Note: Observed fruit and vegetable sink blocked and filled with empty sauce containers and bags. CA: except for whole, raw fruits and vegetables that are intended for washing by the consumer before consumption, raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only, to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served, or offered for human consumption in ready-to-eat form.

Item 15A Good Retail Practice

Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed a deep reach in freezer with a lot of duct tape on it in attempt to hold the door closed. When opening the freezer to check the foods, the door was completely off the hinges. CA: 1. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. 2. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. A new freezer must be purchased to replace the deep freezer in disrepair.

Food stored covered — Inspector Note: Observed raw chicken wings stored in the walk in cooler without a lid or covering. Observed a container of white rice sitting on the counter without a lid or covering in the main kitchen. COS: PIC placed a lid on the container CA: Foods stored must be covered or stored in containers to prevent overhead contamination.

Item 6-1D Critical / Risk Factor Corrected On Site (COS)

Time as a public health control: procedures and records — Inspector Note: Observed fried chicken sitting in fryer baskets at temperatures below 135F. When asked about the procedures for cooking and serving the chicken, the PIC informed me that the chicken sits on the fryer baskets for an hour before they are thrown away if not ordered. There was no time documentation provided for the chicken in the fryer baskets. Observed cooked white rice sitting in container without time documentation written on or near the container. PIC stated that both items were cooked or placed in their areas 30 minutes prior to my arrival for inspection. CA: The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. COS: PIC wrote times for the foods items listed above on container and in front of fryer.
