Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed clean food container stacked wet. After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food. PIC advised to allow utensils to air dry.
Physical facilities installed, maintained, and clean — Inspector Note: Observed dark organic growth and water dripping from multiple vents in main kitchen. Facility must clean and repair to avoid potential splash contamination of food and single service items. Also observed water settling beneath tiles in front walk-in cooler door. Advised to repair.
