Item 12C Good Retail Practice Corrected On Site (COS)

Wiping cloths: properly used and stored — Inspector Note: Observed the sanitizer bucket to be stored on the floor. CA: Containers of chemical sanitizing solutions in which wet wiping cloths are held between uses shall be stored off the floor and used in a manner that prevents contamination of food, equipment, utensils, linens, single-service, or single-use articles. COS: Sanitizer was removed from the floor.

Wiping cloths: properly used and stored — Inspector Note: Observed wiping cloths used to wipe contact surface outside of the sanitizer water/bucket. Observed wiping cloths to be unclean with food debris/ particles. Cloths in-use for wiping counters and other equipment surfaces shall be: Held between uses in a chemical sanitizer solution at a concentration. Dry wiping cloths and the chemical sanitizing solutions in which wet wiping cloths are held between uses shall be free of food debris and visible soil. COS: New wiping cloth was used and stored inside sanitizer water.

Nonfood-contact surfaces clean — Inspector Note: Observed the inside of the prep top cooler and the walk in cooler shelves to be heavily unclean with excess food build up. Observed the reach in cooler to be unclean. CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Note: Attached is the pictures of violations for both the walk in cooler and the prep top coolers

Sewage and waste water properly disposed — Inspector Note: Observed unclean waste water held inside the mop bucket. CA: Other Liquid Wastes and Rainwater. Condensate drainage and other non-sewage liquids and rainwater shall be drained from point of discharge to disposal according to law. Informed person in charge to dispose waste water as soon as possible. Note: See attached violation pictures.

CA: outer openings of a food service establishment shall be protected against the entry of insects and rodents by: Filling or closing holes and other gaps along floors, walls, and ceilings. COS: Door was closed.

Adequate handwashing facilities supplied & accessible — Inspector Note: Observed pieces of egg shells inside the hand sink in the main kitchen. CA: A handwashing facility may not be used for purposes other than handwashing. COS: Hand sink was cleansed. Note: Attached is the picture of violation.

COS: Floor was covered.
