1 recorded inspectionProper cooling methods used: adequate equipment for temperature control โ Inspector Note: Observed multiple containers of shredded lettuce cooling using methods that were not effectively cooling the food at a fast enough rate. PIC stated the shredded lettuce had been prepped about 1 hour prior. Observed the lettuce at 48F, stored in a tall plastic container that was tightly covered with plastic wrap, located in the front prep top cooler. After about 1 hour, the lettuce was checked again and was still at 48F. CA: Cooling shall be accomplished by using one or more of the following methods depending on the type of food being cooled: (i)Placing the food in shallow pans; (ii) Separating the food into smaller or thinner portions; (iii) Using rapid cooling equipment; (iv) Stirring the food in a container placed in an ice water bath; (v) Using containers that facilitate heat transfer; (vi) Adding ice as an ingredient; or (vii) Other effective methods. Pf When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: (i) Arranged in the equipment to provide maximum heat transfer through the container walls; and (ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: Upon checking the temperature of the shredded lettuce a second time and seeing no cooling progress, PIC moved the lettuce to the walk-in-cooler. After about 20 minutes, observed the lettuce cool to 45F.
Adequate handwashing facilities supplied & accessible โ Inspector Note: Observed no handwashing cleanser at the handwashing sink near the "Jimmy Johns" side of the facility. PIC stated they they are waiting on an order that will have the soap for that sink. Discussed PIC to obtain handwashing cleaner (soap) by the end of today (3.11.26) and to send a picture to the health authority. CA: Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap.
