Item 12B Good Retail Practice

Personal cleanliness — Inspector Note: Observed food handler make a drink with painted nails. CA: Fingernails. Employees shall keep their fingernails clean and trimmed to no longer than the tips of the fingers. Pf Unless wearing gloves in good repair, a food employee may not wear fingernail polish or artificial fingernails when working with exposed food. Discussed with PIC that employees with artificial or painted nails shall wear gloves.

Personal cleanliness — Inspector Note: Observed food handler prepping food with a bread longer than 1/2 inch. CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.

Post the permit in a location in the food service establishment that is conspicuous to consumers. Discussed with PIC to call main office at [REDACTED PHONE] to make payment for food service permit.

Plumbing installed; proper backflow devices — Inspector Note: Observed cold water nozzle not operatable at the time of inspection. CA: System Maintained in Good Repair. A plumbing system shall be repaired according to law; P and maintained in good repair. Discussed with PIC that hand sink nozzle shall be repaired within 72 hours.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed buildup of slime on soda dispensing nozzles at the coke machine. Observed interior of ice machine with black buildup. Observed dishes stored as clean in container with heavy accumulation of debris. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. Nozzles were replaced during the inspection. COS- PIC removed nozzles to be washed, rinsed and sanitized. Ice machine was cut off and PIC stated the once the ice is melted the ice machine will be washed rinsed and sanitized before use. PIC stated that dishes in the container is not in use and it will discarded.
