Proper cold holding temperatures — Inspector Note: Observed raw chicken (44F), raw beef(44F) and cooked noodles (47F) stored at the prep top cooler not maintaining a TCS food temp of 41F or below. COS: Noodles were moved to the walk in freezer to rapid cool to 39F. The raw beef was and raw chicken was discarded by PIC.
