Item 11A Good Retail Practice Corrected On Site (COS)

Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed container with rice inside walk in cooler tightly covered. COS. cover was removed for rapid cooling. PIC advised that when placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: (i) Arranged in the equipment to provide maximum heat transfer through the container walls; and (ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.

In-use utensils: properly stored — Inspector Note: Observed spoons and spatulas used during food prep and serving stored in stagnant water not hot holding at 135F and above. PIC advised utensils shall be stored between uses in a container of water if the water is maintained at a temperature of at least 135°F (57°C) and the container is cleaned at a frequency specified under DPH Rule

Tub was moved to reach in cooler for cooling. Also observed pans of fried chicken and cooked shrimp set for cooling inside walk in cooler tightly wrapped. PIC advised that when placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: (i) Arranged in the equipment to provide maximum heat transfer through the container walls; and (ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.
