Proper cold holding temperatures — Inspector Note: Observed a few TCS food items cold-holding above 41F. Those TCS foods items were goat cheese, chopped tomatoes and egg patty. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: Since those TCS food items were placed in the prep top cooler at around 9:30am PIC voluntarily added ice to the unit to cool down the TCS items listed.
