Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed several metal pans, lids, and utensils stored clean still wet and stacked on top of one another. CA: cleaned equipment and utensils shall be stored: (i) In a clean, dry location; (ii) Where they are not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 centimeters) above the floor. and: (i) In a self-draining position that allows air drying; and (ii) Covered or inverted. Advise PIC to re-organize drying equipment and utensils to be in a self-draining position and allow to fully air dry before stacking.

Time as a public health control: procedures and records — Inspector Note: Observed cut, leafy greens in front service area out of temperature, PIC informed that they were being held as TPHC. Date marking stickers noted discard time as EOD. CA: The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. COS: PIC and staff re-labeled TPHC cut leafy greens discard time as 2pm based on stated prep work start time of 10am.
