COS: employee was educated and complied by removing the plastic to allow proper cooling. CA:(ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.
Personal cleanliness — Inspector Note: Observed employee preparing TCS ready to eat bread while wearing bracelets. COS: TCS ready to eat bread was discarded, bracelets were removed and hands were washed before returning to work. CA:511-6-1.03(5)(g) - Jewelry (C) (g) Jewelry.
