Nonfood-contact surfaces clean — Inspector Note: Observed the interior of the undercounter area of the prep-top cooler with excessive food debris. Observed the interior of the 2-door reach-in cooler with excessive pizza dough residue. Observed the interior of the reach-in freezer with accumulated pizza dough and other food debris. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Plumbing installed; proper backflow devices — Inspector Note: Observed the 3-compartment sink leaking into a bucket. Staff must ensure that wastewater is properly discarded into the mop sink once the bucket becomes full to prevent improper disposal and potential contamination. CA:A plumbing system shall be repaired according to law; P and maintained in good repair.

CA: Equipment food-contact surfaces and utensils shall be cleaned: In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment: At a frequency specified by the manufacturer; or Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed Dish machine chlorine sanitizer not at proper minimum strength. PIC stated that it is not easy to get ECOLab out on site. Discontinue use of dish machine until it has been repaired and meets compliance. CA:A chlorine solution shall have a minimum temperature based on the concentration of 50-100 ppm.
