Personal cleanliness — Inspector Note: CA: Employees shall keep their fingernails clean and trimmed to no longer than the tips of the fingers. Pf Unless wearing gloves in good repair, a food employee may not wear fingernail polish or artificial fingernails when working with exposed food. Pf Observed food employee with long white fingernails prepping food in the main kitchen without wearing any gloves. COS: Food employee washed hands and put on gloves.

Food-contact surfaces: cleaned & sanitized — Inspector Note: CA: In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment. Observed pink slime buildup on the white panel inside the ice machine. COS: PIC discarded all ice and put in a work order for routine cleaning.
