CA: 511-6-1.05(10)(a) - Equipment & Utensils, Air-Drying Required (C) (10) Protection of Clean Items. (a) Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils: Shall be air-dried or used after adequate draining before contact with food Discussed with PIC that dishes shall air dry completely before stacking.
Insects, rodents, and animals not present — Inspector Note: Observed 1 roach crawling on the wall near the mop sink, and several dead roaches behind the soda syrup boxes dispenser. CA: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises. Discussed with PIC to deep clean area behind the soda syrup dispenser.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed accumulation of black build up on the magnetic knife holder. Clean knives and knife blades directly stored touching the soiled magnetic knife holder. CA: Equipment food-contact surfaces and utensils shall be cleaned: At any time during the operation when contamination may have occurred. P Advised PIC to increase frequency of cleaning and sanitizing. New Violation. COS: PIC removed knives and placed in 3 compartment sink to be washed and sanitized. PIC started to clean magnetic knife holder.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed build up of organic substances (pink slime) in the ice machine. CA: 1. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. COS: PIC started melting and emptying ice machine to clean, rinse, and sanitize.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed the use of unapproved bleach(not EPA approved) for sanitizing in 3 compartment sink and in sanitizer bucket. CA: A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instructions. COS: PIC sent employee to get EPA approved bleach.
