CA: Single-service and single-use articles shall be stored in a clean, dry location; where they are not exposed to splash, dust, or other contamination; and at least 6 inches (15 centimeters) above the floor. COS: Food employee moved the box to a shelf in the dry storage area.

CA: Food shall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. COS: Food employee provided plastic coverings for each food container stored under the prep to cooler and inside of the walk-in cooler.

CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and for food that is not time/temperature control for safety with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon. COS: Food employee removed metal containers and placed them in the dish area.
