Approved thawing methods used — Inspector Note: Raw salmon observed in the walk in cooler thawed while still in the ROP packaging. CA: 5. Reduced oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment: (i) Prior to its thawing under refrigeration that maintains the food temperature at 41°F (5°C) or less; or (ii) Prior to, or immediately upon completion of its thawing, using procedures to completely submerge in running water as specified in paragraph 2 of this subsection. Discussed with the PIC to remove fish from ROP packaging when thawing. Remove from packaging tonight.

Pf Discussed with PIC to obtain strips for all sanitizers used.

Doors must also be self-closing. CA:(i) Closing Toilet Room Doors. Except during cleaning and maintenance operations, toilet room doors as specified under subsection (2)(l) of this Rule shall be kept closed.

Food-contact surfaces: cleaned & sanitized — Inspector Note: OBSERVATION: dishmachine in the kitchen has no sanitizer and reading is 0ppm chlorine, rinse aid was set in the sanitizer hose. COS: Chlorine bucket installed, primed sanitizer and now reading. CA: Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration, and Hardness. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instructions P, and shall be used as per the manufacturer instructions.

Pf COS- Inspector provided test strips for both Quat sanitizer and Chlorine sanitizer. Discussed with PIC and ECOLAB rep to obtain strips for all sanitizers used.

Food-contact surfaces: cleaned & sanitized — Inspector Note: OBSERVATION: dishmachine in the bar and the kitchen set-up with Quat sanitizer that is not designed for mechanical dishwashing. COS: Quat sanitizer tablets used to set up sanitizer in the bar dish sink sanitizer compartment, reading now 300ppm Quat. Kitchen dish sink set-up with EPA approved bleach and reading is now 100ppm chlorine. Ecolab representative arrived onsite to discuss that the correct sanitizer and test strips will be provided tomorrow. CA: Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration, and Hardness.
