Proper date marking and disposition — Inspector Note: Observed multiple ready-to-eat, TCS foods stored under refrigeration that were date marked that they had been prepared over 7 days ago. Food items included containers of sopas pollo (chicken soup) date marked that they were to be discarded on 7/25/26 and spinach and cheese dip, date marked that it was to be discarded 7/8/26. CA: A food that requires date marking shall be discarded if it exceeds 7 days, not including the time that the product is frozen. COS: The PIC voluntarily discarded these food products.

Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed "thank you" plastic bags, cut into circles, being used to shape tortilla dough. CA: Utensils and food-contact surfaces of equipment shall be made of materials that do not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions, and shall be: P safe P, durable, corrosion-resistant, and nonabsorbent. In addition, materials shall be sufficient in weight and thickness to withstand repeated warewashing and shall be finished to have a smooth, easily cleanable surface. Materials shall be resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition. COS: PIC discarded the cut plastic bags. Suggested using parchment paper for this purpose instead.

CA: A food that requires date marking shall be discarded if it exceeds 7 days, not including the time that the product is frozen. COS: The PIC voluntarily discarded these food products.
