Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed forks at the consumer self service area were not pre-wrapped and the food/lip-contact surfaces were presented to the consumer (the handles were not presented to the consumer.) COS: Person in charge voluntarily discarded and replaced forks. CA: 2. Knives, forks, and spoons that are not pre-wrapped shall be presented so that only the handles are touched by employees and by consumers if consumer self-service is provided.
