Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed cloth towels lining counter space and at the bottom of forks in equipment and utensil storage area. CA: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Discussed with PIC that they must removed all towels from surfaces holding utensils.

Proper cold holding temperatures — Inspector Note: Observed foods in reach in cooler cold holding at temperatures above 41F. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food (TCS) shall be maintained at 41°F (5°C) COS: The foods that were cooling inside of the RIC were removed and placed in the walk in cooler to cool down. TCS foods that were stored inside the cooler and not prepared on this day were discarded.
