CA:CA: Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from: Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables, Cooked ready-to-eat food. COS: Raw chicken was stored below raw beef, raw beef was stored below raw shelled eggs and away from from ready to eat food items.
Toxic substances properly identified, stored, used — Inspector Note: Observed bleach sanitizer bucket at 200ppm+. CA: Informed person in charge to always check sanitizer level to be at 50-100ppm when sanitizing food contact surfaces. COS: Bleach sanitizer was corrected to 100ppm
