Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed exposed wood (nonfood-contact) and wood covered with carpet like material in mobile unit. Observed floors peeling under table near fryer with exposed plywood. CA: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Informed PIC to seal or replace wood/carpet and flooring to cover up or remove any unapproved materials.
Plumbing installed; proper backflow devices — Inspector Note: Observed absorbent cloths at the wastewater outlet and fresh water vent. CA: Materials that are used in the construction of a mobile water tank, mobile food service unit water tank, and appurtenances shall be: 1. Safe; 2. Durable, corrosion-resistant, and nonabsorbent; and 3. Finished to have a smooth, easily cleanable surface. Discussed with PIC to removed any absorbent materials inside the outlets or vents of water tanks.
Physical facilities installed, maintained, and clean — Inspector Note: Observed floors and walls in mobile unit in need of cleaning due to excess grease build-up. CA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
Adequate handwashing facilities supplied & accessible — Inspector Note: Observed no hand drying provision on mobile unit. CA: Each handwashing sink or group of adjacent handwashing sinks shall be provided with: 1. Individual, disposable towels; 2. A continuous towel system that supplies the user with a clean towel; 3. A heated-air hand drying device; or 4. A hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures Discussed with PIC to always have back-ups in base or other mobile so paper towels never run out. PIC did not have any back-up paper towels day of inspection.
