Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. COS: The person in charge relocated all TCS food items to the downstairs walk-in cooler.
Food in good condition, safe, and unadulterated — Inspector Note: Observed visible organic growth on cooked beef stored in the walk-in cooler during the time of inspection. CA: (1) Condition. Food shall be safe, unadulterated, and honestly presented. P COS: The person in charge discarded the cooked beef.
Proper cold holding temperatures — Inspector Note: Observed cut tomatoes at 52F Cooked spaghetti noodles and cooked beef at 52F cold-held above 41F for more than four hours during the time of inspection. CA: (f) Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above, except that roasts cooked to a temperature and for a time specified in subsection (5)(a)2 of this Rule and reheated using the same temperature and time conditions as cooking may be held at a temperature of 130°F (54°C) or above. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris Advised PIC to conduct a thorough deep cleaning of the facility to maintain sanitary conditions and prevent contamination.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed rust present in the interior of the cooler located in the front section of the main kitchen. CA:Cleaning of Equipment and Utensils. (a) Equipment, Food-Contact Surfaces, and Utensils. 1. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. Advised PIC to removing rust and monitoring regularly to prevent potential contamination of food or food-contact surfaces. Repair or replace affected components as needed.
