Item 14A Good Retail Practice

In-use utensils: properly stored — Inspector Note: Observed 2 scoops stored in dry storage food with the handle touching the food, or with no handle. CA: 2.During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: In food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon. CORRECT BY: If a scoop is used and stored in the dry food item, it must have a handle and the handle must be stored sticking up out of the food.

Warewashing facilities: installed, maintained, used; test strips — Inspector Note: PIC was unable to provide sanitizing test strips at the time of inspection. CA: Sanitizing Solutions, Testing Devices. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. CORRECT BY: Test strips for both the quat and chlorine/bleach sanitizers must be kept onsite and used. Test strips must be acquired and evidence sent to inspector no later than 9/15/2026.

Item 14A Good Retail Practice Corrected On Site (COS)

In-use utensils: properly stored — Inspector Note: Storage of In-Use Utensils. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored, in the food with their handles above the top of the food and the container, in running water of sufficient velocity to flush particulates to the drain, if used with moist food such as ice cream or mashed potatoes. Observed ice cream scoop used with moist food not stored in running water of sufficient velocity to flush particulates to the drain. COS: Person in Charge (PIC) removed said utensils to be washed , rinsed and sanitized and stored in a clean food storage pan.

Plumbing installed; proper backflow devices — Inspector Note: System Maintained in Good Repair. A plumbing system shall be repaired according to law; and maintained in good repair. Observed leak dripping onto bucket from indirect waste line from hand wash sink in kitchen. Person In Charge was advised to have leak repaired by a licensed plumber and send invoice to inspector via email by 1/20/26.

Equipment is used for storage of packaged or unpackaged food, such as a reach-in refrigerator, and the equipment is cleaned at a frequency necessary to preclude accumulation of soil residues. Observed unopen packets of raw ground beef stored directly on an accumulation of blood residue on bottom floor area of prep top cooler in main kitchen. Person in Charge was advised to wash, rinse and sanitize said area and send pictures to inspector via email by 1/20/26.
