Food stored covered — Inspector Note: Observed a food container of lettuce and cooked chicken wings stored under the prep top cooler without any lids or plastic coverings. CA: Food stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled, shall be protected from overhead contamination. COS: PIC provided lids for each food container stored under the prep top cooler.
Contamination prevented during food preparation, storage, display — Inspector Note: Observed a bag of ice sitting on the floor in the walk-in freezer and a box of lids sitting on the floor in the dry storage area. CA: All food items shall be in a clean, dry location where it is not exposed to splash, dust, or other contamination; and at least 6 inches (15 cm) above the floor. COS: PIC moved the bag of ice to a shelf in the walk-in freezer and the box of lids to a shelf in the dry storage area.
