1 recorded inspectionContamination prevented during food preparation, storage, display — Inspector Note: Observed a large, uncovered pan of chickpeas with a jug of milk and a bowl of rice stored directly on top of the chickpeas. CA: Food shall be protected from contamination. COS: PIC discarded the pan of chickpeas.
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed multiple ready-to-eat foods (baked potatoes, cut okra, cut zucchini) being stored directly inside black slotted crates, with no food grade barrier between the food and the crate. CA: Utensils and food-contact surfaces of equipment shall be made of materials that do not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions, and shall be: P safe P, durable, corrosion-resistant, and nonabsorbent. In addition, materials shall be sufficient in weight and thickness to withstand repeated warewashing and shall be finished to have a smooth, easily cleanable surface. Materials shall be resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition. COS: PIC discarded potatoes. Other food items were re-washed in the vegetable sink and put into food grade containers.
Food separated and protected — Inspector Note: Observed a very large metal bowl of raw chicken stored on a shelf directly above a box of zucchini and a box of romaine lettuce. CA: Foods shall be stored and separated based on the food item's minimum internal cook temperature, to prevent cross contamination. COS: PIC moved the raw chicken to the bottom shelf and the zucchini and romaine lettuce to the upper shelf.
