A food establishment shall have written procedures for employees to follow and an EPA registered disinfectant effective against Norovirus available on-site at the food service establishment when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. Toxic substances properly identified, stored, used — Inspector Note: OBSERVATION: Sanitizer in wiping cloth buckets over 400ppm Quat, dishmachine dispensing over 200ppm chlorine at the plate. COS: dishmachine cannot be used until the reading is 50ppm chlorine, manual sanitizing in the dish sink required using 200ppm Quat. Wiping cloth buckets re-set near the fryer to 200ppm Quat.
