Personal cleanliness — Inspector Note: Observed food handler preparing food without beard guards. CA. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.

Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed clean utensils stacked together wet. PIC advised to allow utensils to air dry before stacking.

Nonfood-contact surfaces clean — Inspector Note: Observed accumulation of food debris and dust on oven and vent hood. CA. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Physical facilities installed, maintained, and clean — Inspector Note: Observed openings in ceiling tiles above water heater. Also observed dusty wall behind oven in main kitchen. PIC advised to seal openings in ceiling and clean wall. All physical facilities shall be maintained in good repair and the physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products
