1 recorded inspectionProper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed pizza sauce being cooled using an unapproved cooling method. Large plastic containers of pizza sauce were found in the reach-in cooler tightly covered with plastic wrap and stacked, which can impede proper cooling. Proper cooling procedures were discussed with the manager, including leaving containers uncovered or loosely covered during the initial cooling process and avoiding stacking until the product has reached the required temperature. During the inspection, the pizza sauce containers were unstacked and the plastic wrap was removed to facilitate proper cooling. Discussed cooling shall be accomplished by using one or more of the following methods depending on the type of food being cooled: (i) Placing the food in shallow pans; Pf (ii) Separating the food into smaller or thinner portions; Pf (iii) Using rapid cooling equipment; Pf (iv) Stirring the food in a container placed in an ice water bath; Pf (v) Using containers that facilitate heat transfer; Pf (vi) Adding ice as an ingredient; Pf or (vii) Other effective methods. Pf 2. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: (i) Arranged in the equipment to provide maximum heat transfer through the container walls; and Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.

Adequate ventilation and lighting; designated areas used — Inspector Note: Observed an employee's personal beverage stored on the food preparation countertop. Employee personal beverages must be stored in a designated area where they cannot contaminate food, equipment, utensils, linens, or single-service articles. The beverage was relocated to an approved storage location during the inspection.
