Proper cold holding temperatures — Inspector Note: Observed TCS food items cold hold over 41F. Those TCS food items were empanadas of different flavors (6 beef empanadas holding between 47-48F, 5 cheesy beef empanadas holding at 45F, 1 ham empanada holding at 47F, and 8 caprese empanadas holding between 45-48F). According to PIC all empanadas were held in the cooler since 10/13/2025 1:34pm, past the 6 hour mark. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC voluntarily discarded the empanadas.
