2 recorded inspectionsWiping cloths: properly used and stored — Inspector Note: Observed multiple in use wet wiping clothes being held on the counter top and not in the sanitizer bucket. CA: Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and (ii) Laundered daily. Advised PIC to keep all in use wet wiping clothes in the sanitizer bucket.
Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed multiple bags of clean linen being stored directly on the floor in the storage closet. CA: Equipment, Utensils, Linens, and Single-Service and Single-Use Articles. 1. Except as specified in paragraph 4 of this subsection, cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored: (i) In a clean, dry location; (ii) Where they are not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 centimeters) above the floor.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed liquid and food debris on the counters of the prep stations. CA: Equipment food-contact surfaces and utensils shall be cleaned: Equipment food-contact surfaces and utensils shall be cleaned. Advised PIC to clean the counter tops more frequently.
Contamination prevented during food preparation, storage, display — Inspector Note: Observed multiple boxes of Torani sweetening syrups on the floor in the main kitchen and on the ground outside of the facility. CA: Food Storage. 1. Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food: (i) In a clean, dry location; (ii) Where it is not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 cm) above the floor. COS:PIC is removing multiple boxes of Torani sweetening syrup from the floor of main kitchen and the ground outside the facility and placing boxes 6 inches above the floor in dry storage area.
