CA: 511-6-1.04(4)(d) - Food Storage Containers Identified with Common Name of Food (C) (d) Food Storage Containers, Identified with Common Name of Food. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food. COS: PIC labeled the working containers with common name.

Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed prep equipment stacked wet above the 3 compartment sink in ware washing area. CA: 511-6-1.05(10)(a) - Equipment & Utensils, Air-Drying Required (C) (10) Protection of Clean Items. (a) Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils: 1. Shall be air-dried or used after adequate draining before contact with food; and 2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. Advised PIC equipment & utensils must be tilted or positioned in a way to allow the water to flow off equipment & utensils to allow proper air drying.

Plumbing installed; proper backflow devices — Inspector Note: Observed the vegetable prep sink leaking water at the base of faucet. CA:511-6-1.06(2)(r) - System Maintained in Good Repair (P, C) (r) System Maintained in Good Repair. A plumbing system shall be repaired according to law; P and maintained in good repair. Advised PIC vegetable sink must be in good repair. PIC will must have a licensed plumber fix sink and send repair invoice to the inspector.
