CA: A handwashing sink shall be maintained so that it is accessible at all times for employee use. A handwashing facility may not be used for purposes other than handwashing. COS: Food employee removed blue bucket from hand-washing sink and placed in the dish area.

In-use utensils: properly stored — Inspector Note: CA: Food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container. Observed a plastic cup being used as a scoop to serve orange rice from the bain-marie (unit 2). COS: PIC discarded plastic cup from orange rice and replaced with tongs.

Nonfood-contact surfaces clean — Inspector Note: CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Observed water sitting at the bottom of the reach-in cooler. Advised PIC to put in a work order for the reach-in cooler.

Hands clean and properly washed — Inspector Note: CA: Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles. Observed food employee switching tasks in between making food, writing on personal note pad, touching cellphone, and changing gloves without washing their hands. COS: Food employee discarded gloves and washed their hand before putting on new gloves.

COS: PIC provided a plastic covering for the food container of cooked tilapia in the reach-in cooler and discarded the tray of cooked tilapia in the reach-in freezer after the tray came into contact with raw beef.
