2 recorded inspectionsPersonal cleanliness — Inspector Note: Observed employees wearing arm jewelry and watches while preparing food in the main kitchen and bar. CA: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: Employees removed jewelry and watch when inspector discussed matter with them.
Wiping cloths: properly used and stored — Inspector Note: Observed sanitizer buckets on the main line and the bar reading was 0ppm Quat. CA: Wiping cloths shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n) COS: Sanitizer was added to the buckets and the new readings were 200ppm Quat. Discussed with PIC and staff to use the test strips to check the sanitizer readings, to order more test strips for the facility that are easily accessible.
Proper cold holding temperatures — Inspector Note: Observed chicken wings cold holding at a temperature of 44 F from more than four hours. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above, except that roasts cooked to a temperature and for a time specified in subsection (5)(a)2 of this Rule and reheated using the same temperature and time conditions as cooking may be held at a temperature of 130°F (54°C) or above. COS: PIC voluntarily discarded chicken wings.
Toxic substances properly identified, stored, used — Inspector Note: Observed one sanitizer bucket in main kitchen with Quat reading of 400ppm; sink in main kitchen also had sanitizer over 400pm. CA: Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall: meet requirements specified in 40 CFR 180.940 COS: PIC adjusted Quat levels in buckets to 200ppm.
Nonfood-contact surfaces clean — Inspector Note: Observation: Interior of 2 door freezer, gaskets on the 2 Dr freezer and 3 door prep cooler unclean with food debris and build up. Shelves on the main line unclean to sight and touch and exterior of sugar bulk container. CA: The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. 3.
