Unless wearing gloves in good repair, a food employee may not wear fingernail polish or artificial fingernails when working with exposed food.
Personal cleanliness — Inspector Note: Observed employee preparing food without an effective hair restraint. Employee stated hair restraints would be arriving later today. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.
Single-use/single-service articles: properly stored, used — Inspector Note: Observed a single service service cup being used as a measurement cup for rice. COS cup was removed.
Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Facility does not have test strips for Quat sanitizing solution. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
