Nonfood-contact surfaces clean — Inspector Note: Observed fresh blood on the walk-in freezer floor. Observed accumulated dust and dirt on the shelves in the dry-storage area at the back of the kitchen. Observed walk-in cooler walls with an accumulation of black residue near the floor. CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to prevent the buildup of soil and residues.

Insects, rodents, and animals not present — Inspector Note: Observed live and dead roaches along the walls of the ware-wash area. when asking PIC if they had pest control he stated they do not.
