Approved thawing methods used — Inspector Note: Observed ground beef thawing in the meat sink at room temperature. CA: Time/temperature control for safety food shall be thawed under refrigeration that maintains the food temperature at 41°F (5°C) or less; PF or completely submerged under running water at a water temperature of 70°F (21°C) or below. COS: PIC placed the ground beef completely submerged under running water in the meat sink.

In-use utensils: properly stored — Inspector Note: Observed a plastic bowl stored in the food container of salt in the dry storage area. CA: In food that is not time/temperature control for safety, scoops can be stored in food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon. COS: Food employee discarded the plastic bowl from the food container of salt.

Observed a food container of mozzarella sticks stored in the reach-in freezer without any lids or coverings. CA: Food stall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled, to be protected from overhead contamination. COS: PIC provided plastic coverings for each food container in the prep top cooler and reach-in freezer.
