Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. At the time of inspection on food worker was observed with a wrist watch worn while preparing food for customer consumption in main kitchen. Corrected on Site: Person in Charge had food worker remove watch, wash hands and donn new gloves.
Nonfood-contact surfaces clean — Inspector Note: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. At the time of inspection the exterior sides of both deep fryers were observed with an accumulation of grease residue. Additionally, floors under and behind deep fryers were also observed with an accumulation of grease residue and old food debris. Person in charge was advised to create a cleaning schedule to avoid an accumulation and to send pictures of cleaned equipment to inspector via email by 6/10/26.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Equipment food-contact surfaces and utensils shall be cleaned:Equipment is used for storage of packaged or unpackaged food, such as a reach-in refrigerator, and the equipment is cleaned at a frequency necessary to preclude accumulation of soil residues. Observed food storage shelves in walk in cooler with an accumulation of white fungus like substance. Person in Charge was advised to clean said shelves by 6/10/26 and send pictures to inspector via email.
Consumer advisory provided for raw and undercooked foods — Inspector Note: If an animal food such as beef, eggs, fish, lamb, pork, poultry, or shellfish is served or sold raw, undercooked, or without otherwise being processed to eliminate pathogens, either in ready-to-eat form or as an ingredient in another ready-to-eat food, the permit holder shall inform consumers of the significantly increased risk of consuming such foods by way of a disclosure and reminder, as specified in paragraphs 2 and 3 of this subsection using brochures, deli case or menu advisories, label statements, table tents, placards, or other effective written means. The disclosure and reminder statements shall be worded in legible type in all capital letters and no smaller than font size #8, or if displayed on a menu board shall be printed no smaller than the smallest lettering used for a menu item. 2. Disclosure shall include: (i) A description of the animal-derived foods, such as “oysters on the half shell (raw oysters),” “raw egg Caesar salad,” and “hamburgers (can be cooked to order);” or (ii) Identification of the animal-derived foods by asterisking them to a footnote that states that the items are served raw or undercooked, or contain (or may contain) raw or undercooked ingredients. 3. The reminder shall include asterisking the animal-derived foods requiring disclosure to a footnote that states: (i) Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness; (ii) Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness, especially if you have certain medical conditions. At the time of inspection menu indicates that a customer can order egg any style and no consumer advisory was observed on Menu Board or Menu Brochure. Person in Charge was advised on previous permit inspection to provided said advisory. Advisory can be done using the guidelines provided by 6/10/26b and email picture to inspector.
