CA: outer openings of a food service establishment shall be protected against the entry of insects and rodents by Solid, self-closing, tight-fitting doors. COS: The door was closed.
Proper cold holding temperatures — Inspector Note: Observed multiple foods in walk in cooler and the ambient temperature of walk in cooler cold holding above 41F. Observed milk at meat prep station cold holding at temperature above 41F and not held in a cooler. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) COS: All foods that were prepped more than 6 hours before inspection were discarded. Foods prepped the day of inspection within the 6 hour limit were added to ice baths. Walk in cooler temperatures were lowered to a temperature below 41F
Proper hot holding temperatures — Inspector Note: Observed grits and mashed potatoes in two different rice cookers hot holding at temperatures below 135F. PIC and staff stated that the grits were moved from the walk in cooler to the rice cooker an hour prior to start of inspection. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 135°F (57°C) or above. COS: Grits and mashed potatoes were reheated in crock to 165F.
