Item 16A Good Retail Practice

Hot and cold water available; adequate pressure — Inspector Note: Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment. Observed no hot running water at hand wash sink in bar area. Water temperature measured at 71F. Person in Charge was advised to have sink serviced by a licensed plumber and send invoice to inspector by 4/13/26 via email.

Physical facilities installed, maintained, and clean — Inspector Note: Cleaning, Frequency and Restrictions.The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Observed an accumulation of grease and old food particles on floor under deep fryer, accumulation of food residue on ceiling tiles in dry food storage room all in main kitchen. Person in Charge was advised to create a cleaning schedule to avoid accumulation and possible contamination of food products.

Adequate ventilation and lighting; designated areas used — Inspector Note: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food,equipment, linens, and single-service and single-use articles are protected from contamination shall be provided. Observed employee beverages, bags and other personal items stored amongst dry food products for customer use in dry food storage area in main kitchen. Corrected- on- site: Person in charge located a designated area and moved employee items to said area at the time of inspection.

Adequate ventilation and lighting; designated areas used — Inspector Note: Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food; Observed light shield cracked in fruit and vegetable walk in cooler in kitchen. Person in charge was advised to replace said shield by 4/10/26 and send picture to inspector via email.
